Non-fried noodles that have been dried at high temperatures using high wind speeds are known as quick drying noodles and have a drying time of approximately 2 to 4 minutes.
By blowing hot air through the noodles packed into the basket, the water contained inside the noodles can be evaporated and dried off in a single action.
Regular non-fried noodles are subject to drying for approximately 30 to 45 minutes using hot air ranging in temperature from 70 to 90 ºC. The relatively long length of time required for the noodles to fully dry makes them susceptible to shrinkage with a tendency to harden, which leads to increased time for reconstitution in hot water (boiling). On the other hand, quick drying noodles can be dried in a much shorter space of time (2 to 4 minutes), providing the noodles with expansive properties and increasing the speed of reconstitution in hot water (boiling).
